Ginger Maple Coconut Parfait
This creamy, pretty parfait is an easy dessert for spring! Spices like cinnamon and ginger warm up the flavour while local maple sugar sweetens perfectly.
One can Cha's Organic Coconut Whipping Cream
One package plain or flavoured Nyakers Ginger Snaps
1/4 cup or to taste Temple's Maple Sugar
1/2 tsp or to taste Cha's True Ceylon Cinnamon
Raspberries for garnish
Whip coconut whipping cream according to can directions. While whipping add maple sugar and cinnamon. Continue mixing until coconut whipping cream is smooth and fluffy.
Place tablespoon of coconut whipping cream in dessert dish, place ginger snap on top of cream. Continue layering. Finish with whipped cream and top with a dusting of maple sugar and cinnamon.
Garnish with raspberries. Refrigerate for at least 4 hours, covered, or overnight, to let the ginger snaps completely soften. Makes about four servings. OMG good!
