Golden Morning Muffins
No wheat, no sugar, anti-inflammatory Golden Morning muffin has fresh ginger and organic turmeric, and cooks in the microwave!
- 1 firm banana, mashed well
- 1 egg
- 1 tablespoon oil - try coconut, olive, peanut, sunflower, safflower, or your favourite oil
- 1 tablespoon fresh grated ginger, preferably organic
- 3 tablespoons bean flour
- 1 teaspoon alum free baking powder
- 1 teaspoon Cha's Organic Ground Turmeric
- 1 teaspoon Cha's Organic Ground Cinnamon
- 1 teaspoon Buttermilk powder
- 1/4 cup raisins
Microwave on high about 2 minutes, or until centre of batter is firm. Allow to cool, slice and enjoy. This is a great mix and match recipe, so try variations like hulled hemp seeds, cranberries, coconut, lemon zest, dried blueberries or a few fresh berries.
