Greek Meal: Melomakarona (Greek Honey Cookies)

Cake like cookie, not too sweet and tastes like baklava.
Ingredients

3/ 14 cup all purpose flour

1 tsp baking powder

1/2 tsp baking soda

Small pinch of salt

Zest from 1 orange

1/2 cup sugar

1/2 cup olive oil
-
1/2 cup canola oil
-
2 tbsp brandy
-
1/2 cup honey
-
1/2 cup sugar
-
3/4 cup water
-
1/2 cinnamon stick
-
2 whole cloves
-
1" piece lemon rind
-
1/2 tsp lemon juice

1/4 cup finely chopped toasted walnuts or pistachios, ground cinnamon

Dough
Mix dry ingredients together
Add orange zest to sugar, rub to release oils
Add olive oil and canola oil with sugar into bowl. Mix until well blended
Add orange juice and brandy. Mix well
Add dry ingredients, 1 cup at a time, mix just until blended
Roll dough about the size of a walnut into an oval shape. Place on parchment lined pan
Press with fork to flatten and slightly
Bake at 325 degrees - 20 min
Syrup
Combine syrup ingredients. Bring to a boil, then simmer 10 - 15 min
Remove cinnamon stick, cloves and rind
Add lemon juice, set aside
Dip cookies while still warm into the syrup, turn to absorb on both sides
Place cookies onto platter or plate
Press ground nuts on top, sprinkle with cinnamon
