Greek Meal: Roasted Marinated Peppers

Great side dish to the richness of the spanakopita. Sweet, bright flavours and colourful addition.
Ingredients

3 large peppers or 1 bag mini peppers

1 tbsp olive oil (Ilias & son)

1 tbsp red wine vinegar

1 garlic clove, thinly sliced
Directions
Preheat broiler
Cut peppers om half, remove stems and seeds. Place on foil lined tray
Broil skin side up until charred
Remove and wrap foil around peppers
Let cool, unwrap and remove skins
Place on serving platter, drizzle with oil and vinegar, top with sliced garlic
Marinate at least 30 min before serving
