Spanakopita is a delicious savory Greek pie made of perfectly crispy layers of phyllo dough and a comforting filling of spinach and feta cheese.
Ingredients

1 cup diced onion

1 cup sliced scallions

1 1/2 tbsp olive oil

2 bunches fresh spinach, well minced, chopped

1/ cup fresh dill, chopped

1 cup flat leaf parsley chopped

2 eggs, beaten

8 oz crumbled feta
-
Pepper

16 - 20 sheets phyllo dough, thawed

Olive Oil
Directions
Filling
Heat oil, saute onions and garlic - 10 min
Add spinach in batches, stir until wilted
Add dill and parsley, fresh ground pepper, stir to combine. Let cool
Squeeze extra moisture from spinach mmixture if neccessary
Combine with eggs, feta and fresh ground nutmeg (if desired 1/4 tsp)
Can be made the day before and refriderated until ready to assemble.
Pie
Brush an 8" square dish with olive oil
Brush first sheet of phyllo with oil, fold in half, place in baking dish. repeat 3 more times, up sides of the dish. Place spinach mixture on top
Top with 4 more phyllo sheets, folded in half and brushed with oil
Fold edges over top. Brush top layer with oil
Bake at 325 degrees for 35-45 min, until golden brown. Cut through the top phyllo layer, just to the filling, not all the way through
