We are so enjoying the vegetables and herbs from the garden. This is a recipe I've made several times, and it has become a favourite summer side dish!
Grilled Corn and Green Bean Salad
We had this salad with grilled eggplant from our garden (look for the recipe on this website) along with fresh, sliced tomato. Add protein if you like with grilled chicken or shrimp. It makes a wonderful summer meal.
2 cobs of corn, grilled
½ lb green beans, steamed until tender crisp (5 minutes)
¼ cup thinly sliced onion or shallot
1-2 tbsp of chopped fresh mint or tarragon
2 tbsp apple cider vinegar
2 tbsp honey
1 tsp Dijon mustard
6 tbsp olive oil
salt and pepper
Mix the dressing ingredients together.
Cut the grilled corn off of the cob. Toss with a little of the dressing. Add the green beans, mix together, add more dressing to taste.
