Grilled Corn on the Cob

Ingredients

4 cobs of corn, shucked

1/4 c unsalted butter, melted

2 tbsp chopped fresh cilantro

zest from 1 lime

2 tsp lime juice

1/8- 1/4 tsp cayenne pepper

salt to taste
Directions
Combine butter, cilantro, lime zest and juice, cayenne pepper and salt.
Place corn on pieces of foil, spread some of the butter mixture on each cob. Wrap with foil. Grill on the barbecue 15-20 min, turn every 2-3 minutes. Unwrap the foil, cut each cob into 3 pieces, place in serving bowl and drizzle with remaining butter.
If you would like to grill the corn in the husks, remove the silk, then soak the cobs in cold water for at least 30 minutes. Remove from water and grill 15- 20 minutes. Peel back the husks, cut the corn into 3 pieces, place in serving bowl and drizzle with melted butter mixture.
