Grilled Quesadillas

Serve with salsa, guacamole and sour cream. Great with a salad on the side.

Ingredients

4 large tortillas

olive oil
-
1 c thinly sliced red onion

1 c sliced peppers

1 garlic clove, minced

1/2 c corn
-
1/2 tsp cumin
-
1 c sliced or diced leftover chicken

2 tbsp barbecue sauce

2 tbsp chopped cilantro

1 c shredded Monterey Jack cheese
Directions
Heat oil. Sauté onions and peppers. Add garlic, corn and cumin. Stir in chicken and barbecue sauce. Mix well. Add cilantro.
Divide between 4 tortillas, top with cheese and fold in half. Place on a baking pan and bake in the oven, or place on parchment paper and grill on the barbecue.
Remove the parchment paper after a few minutes.
Slice in half and serve.
