Grilled Zucchini & Mozzarella Salad
4 small zucchini
2-3 tbsp olive oil and extra for grilling
1/4 tsp crushed chili flakes
1 tbsp lemon juice
1 tsp lemon zest
Salt & pepper
Fresh mozzarella (about 100g)
Trim ends of zucchini & slice into thin slices.Toss with enough oil to coat.
Grill over high heat about 2 mins per side. Place onto a shallow platter.
Combine 3 tbsp oil, lemon juice & zest, chili flakes, salt & pepper to taste.
Tear mozzarella into bite size pieces and scatter over zucchini.Spoon dressing over salad, toss lightly and tsp of fresh basil.
