Lemon Zucchini Muffins

2 cups flour

1/2 cup sugar

1/2 tsp baking powder

1/2 tsp salt

1/2 tsp lemon zest

1/2 cup raisins

1/2 tsp nutmeg

2 eggs

1/2 cup milk (or buttermilk)

1/2 cup canola oil

1 cup grated zucchini
Directions
Mix together dry ingredients.
Mix eggs, milk and oil. Add to dry ingredients.
Stir in raisins and zucchini.
Fill muffin cups. Bake at 350 degrees for 20-35 minutes.
