This is sister Sarah's "Leek Carrot Potato Soup" recipe from her Aunt Karen.
Hardy Family - Leek Carrot Potato Soup

Ingredients

2 Leeks
-
2 large Carrots
-
1 Onion
-
3 Potatoes

1 946ml Pacific Foods Organic Vegetable Broth

1 tsp Curry Powder from our Bulk Bins
-
1 500ml Hewitt’s 10% Cream (or 1 can of Chas Organics Coconut Milk)

Salt & Pepper to taste
Directions
Chop vegetables, put into large pot with broth and curry. Add water to completely cover vegetables. Boil 10 minutes.
Roughly mash vegetables - leave chunks. Add milk, salt and pepper.
Simmer 40 minutes, stirring occasionally.
