Horseradish Mashed Potatoes

Ingredients

4-6 yellow potatoes, peeled and diced

2 bay leaves

1-2 tsp sea salt

2 tbsp butter
-
2 tbsp horseradish (adjust to taste)

2 tbsp chopped chives or italian parsley

salt and pepper
Directions
Cover the potatoes and bay leaves with cold water. Bring to a boil, then simmer for 15-20 minutes or until tender. Drain and mash, add the butter and horseradish, stir well. Add the chives, season and serve.
The horseradish adds a nice zing to the potatoes. If you like creamier mashed potatoes you could add broth or cream to the desired consistency. I figure if I am adding gravy I don't need to add anything extra.
