Peach Streusel Muffins and Peach Clafoutis

Ingredients

2 2/3 cup flour

1 tsp baking soda

pinch of salt

1 tsp ground nutmeg

1 cup brown sugar

1 cup buttermilk
-
1/2 cup canola or coconut oil

2 eggs
-
1 tsp almond extract
-
1 1/2 cups diced peaches

1/4 cup brown sugar

1/4 cup slivered almonds

1/4 cup rolled oats
-
1 tbsp butter
-
3 peaches, sliced
-
3 eggs
-
1/3 cup sugar
-
pinch of nutmeg

1/3 cup flour
-
1 tsp vanilla
-
3/4 cup milk (I used buttermilk which adds a little tanginess)

2 tbsp melted butter
-
1/4 cup sliced almonds (optional)

Directions
Peach Crumble Muffins
Preheat oven to 350°.
Mix dry ingredients together. Whisk sugar, buttermilk, oil, eggs and extract, mix into dry ingredients. Gently stir in peaches. Divide into paper lined muffin tin. Combine brown sugar, almonds, oats and butter. Sprinkle over the muffin batter. Bake for 20-25 minutes.
Peach Clafoutis
Preheat oven to 350°.
Butter a deep 9" pie plate or baking dish, place peaches in the pan.
Whisk the eggs, sugar and nutmeg. Add the flour and whisk until smooth. Add the vanilla and then gradually add the milk. Stir in the melted butter. Pour over the peaches. Bake for 35- 40 minutes. Let cool.
A creamy, flan like dessert with ripe juicy peaches. Best served lukewarm and dusted with icing sugar, or a dollop of whipped cream!
