Ingredients

1 lb jicama

2 tbsp olive oil

½ tsp salt

¼ tsp pepper

½ tsp smoked paprika (or chili powder)
Directions
Preheat oven to 400°F
Peel the jicama and slice into 1/4" thick slices. Place into a glass bowl with 1/4 cup of water. Cover and microwave for 8 minutes, stir halfway through. Carefully remove from the microwave and drain.
Dry off with a paper towel. Toss with oil, salt and pepper and paprika. Place on a parchment paper lined pan in a single layer. Bake for 40 minutes, turn over halfway through.
