Jicama is a root vegetable that is low in calories and high in fiber and water. It is slightly sweet, like a cross between an apple, water chestnut and pear. They make great, low carb veggie fries like these simple ones!
Peel the jicama and slice into 1/4" thick slices. Place into a glass bowl with 1/4 cup of water. Cover and microwave for 8 minutes, stir halfway through. Carefully remove from the microwave and drain.
Dry off with a paper towel. Toss with oil, salt and pepper and paprika. Place on a parchment paper lined pan in a single layer. Bake for 40 minutes, turn over halfway through.
