For this versatile dessert I combined berries and yellow plums to make Mixed Fruit Tarts.
Any combination works, raspberries, blueberries, blackberries, strawberries, nectarines, plums, pears or apples. Whatever you have on hand or your favourites.
Mixed Fruit and Berry Tarts or Pie

This filling is not too sweet so the fresh, tart flavours shine through.
You can top this with your favourite crumble topping, ice cream , whipped cream or just the way they are.
I made individual tarts but this works in a full pie shell as well.
Ingredients

pastry for tarts or a pie rolled out and chilled

5-6 c of mixed berries and fruit

1 tbsp fresh lemon juice

2/3 c sugar

1/4 c cornstarch

1/2-1 tsp of cinnamon, nutmeg or cardamom

1/2 lb butter, room temperature

1/2 c sugar
-
1 egg
-
2 1/2 c flour
Pastry
Directions
Combine the fruit and lemon juice in a bowl. Mix the sugar, cornstarch and spice then toss in with the fruit.
Spoon into your pastry shell or shells. Fill them fairly full since the fruit will reduce when cooking. If you are using a crumble topping, place it on top of the fruit. Place on a parchment lined pan.
Bake at 425°F for 10 minutes then reduce the heat to 350°F and bake for 35-40 minutes.
Pastry
In a stand mixer cream the butter and sugar just until combined. Add the egg and mix. Add the flour and mix until it's a smooth dough. Refrigerate for about 1/2 hour. Roll it out and place in the pan you are using. Any leftover can be frozen. If I have left over I roll it out, place it into the pans and freeze it. I always have pastry ready to go for a quick dessert.
