Mulligawtawny Soup

We had warm naan bread with this fragrant, warming soup. Some pakora nuggets or daal wraps from the deli are great with this also.
Ingredients

2 tbsp butter or ghee

3 stalks celery, diced

1 potato, peeled & diced

2 small onions, diced

2 carrots, diced
-
4 garlic cloves, minced
-
3-4 tsp curry powder
-
1 tsp turmeric
-
1 tsp garam masala
-
1 tsp ground coriander
-
1/4 tsp cloves
-
3 tsp fresh ginger, grated or finely chopped
-
1-2 tsp salt
-
2 tsp ground pepper
-
4-5 cups vegetable broth
-
1 can coconut milk
-
1 tbsp lime juice
-
3 tbsp fresh cilantro

1-1 & 1/2 cups of cooked rice

1 cooked chicken breast, chopped

Directions
Sauté vegetables for 5-10 mins.
Add spices and ginger and sauté for another 3-4 mins.
Then add the broth and simmer until vegetables are tender.
Pour in coconut milk and lime juice, heat thoroughly.
Add rice and or chicken.
Top with fresh cilantro, and serve.
