This is a special birthday cake I made for my daughter, and since we've partnered up to try the Keto Diet, we decided to be good and carry it through even on her birthday. I used a combination of Love My Buns baking mix and almond flour, and skipped the sugar by using Swerve sugar substitute. The cake turned out moist, and totally delicious.
If the mix seems too flaky, just add a bit of water.
- ¾ cup + 1 tbsp Swerve granulated sugar substitute
- 5 eggs
- 1 tbsp pure vanilla extract
- 1¼ cup almond flour
- 1¼ cup Love My Buns baking mix
- 1 tbsp baking powder
- 250ml heavy whipping cream
Grease 8 inch baking pan with coconut oil. Sprinkle 1 tbsp Swerve granulated sugar substitute on bottom.
Mix with electric mixer eggs, vanilla and whipping cream together
Fold together dry ingredients and gradually add to wet mix, mixing constantly until well incorporated
Pour into pan and bake at 350 degrees for 40 minutes or until firm in centre
Let cool, then frost.
- 1 cup butter, room temperature
- 1½ cups Swerve icing sugar substitute
- 2 tbsp heavy whipping cream
- 1 tsp vanilla extract
With electric mixer whip butter until soft, slowly add icing sugar, whipping cream and vanilla. Whip until well mixed and icing is spreadable.
