Ingredients: 1 c. flour; ½ c. almond meal (ground almonds); 1 ½ tsp baking powder; ½ tsp salt; ½ c. butter; ½ c. sugar; ½ c. brown sugar; 2 eggs; 1 tsp orange or lemon zest; 1 tsp vanilla; 3-4 nectarines or peaches, sliced

I love when Ontario nectarines, peaches, plums and apricots start to appear on our shelves. I end up with so many that I can barely keep up with ways to eat them quickly. I always have fruit with my lunch, so sweet and juicy who needs dessert?
But, I love making desserts with them as well!

Nectarine or Peach Cake

Ingredients

1 c. flour
½ c. almond meal (ground almonds)
1 ½ tsp baking powder
½ tsp salt
½ c. butter
½ c. sugar
½ c. brown sugar
2 eggs
1 tsp orange or lemon zest
1 tsp vanilla
3-4 nectarines or peaches, sliced

Directions

Preheat oven to 350°F. Line a 9” pan with parchment paper.
Whisk dry ingredients together. Mix butter and sugars about 4 minutes. Add eggs one at a time, add zest and vanilla. Mix for 3 minutes. Add dry ingredients, mix just until combined. Place into pan and spread evenly. Place sliced fruit on top.
Bake for 45-50 minutes, until a tester comes out clean. Remove and cool in the pan for 20 minutes. Slice and serve with ice cream or whipped cream.
