This is a recipe I started making as a teenager for my family. It originally came from a cookbook of my Mom's. I have slightly adapted the recipe over time.
The name buckle comes from the process of the cake batter rising but the berries and topping weighing it down or causing it to "buckle".
Peaches and blueberries are a classic combination, whether in a pie or cake. Having been a professional baker, I'm fond of scratch cake, and almost all my cake recipes include buttermilk. This Peach Cake is one of my favourites, presented on a beautiful antique glass cake plate, alongside the blueberry sauce.
This is a little easier to serve but with all the great flavours of coconut cream pie. It's best to make the cake the day before or early in the day so it is cool when you are ready to assemble.
I love when Ontario nectarines, peaches, plums and apricots start to appear on our shelves. I end up with so many that I can barely keep up with ways to eat them quickly. I always have fruit with my lunch, so sweet and juicy who needs dessert?But, I love making desserts with them as well!
