One Pan Roasted Shrimp and Potatoes

Ingredients

3-4 yellow flesh potatoes, chopped

1 onion, peeled and sliced

3 tbsp olive oil, divided

3 cloves garlic, finely chopped

2 tsp smoked paprika

2 tsp ground cumin

salt and pepper

2 peppers chopped, red or green

1 bag shrimp, thawed

fresh cilantro or Italian parsley, chopped
Directions
Preheat the oven to 425°. Place potatoes and onion on a baking pan. You can line it with parchment paper for easier cleanup. Toss with 2 tbsp of olive oil, garlic and seasoning. Bake for 20 minutes, then stir. Place back in the oven. Toss the shrimp and peppers with 1 tbsp of oil. After 5 minutes add the shrimp and peppers, stir and spread out. Bake for another 6-8 minutes until the shrimp are cooked through.
Remove from the oven, sprinkle with cilantro or parsley and enjoy!
You can add whatever vegetables you have on hand and change the spices to what you enjoy. It was a quick meal, and easy cleanup!
