We are fortunate that it is Ontario produce and fruit season. So many ways to enjoy the incredible selection available. This salad pairs the sweetness of peaches and corn with the tanginess of goat cheese for a tasty side dish with grilled shrimp, chicken, steak or tofu.
We had spicy grilled shrimp along with the salad which made a nice combination with the sweet components.
Ingredients
2 peaches, sliced
2 cobs of corn, grilled or boiled, kernels sliced off
1/2 c red onion thinly sliced
salad greens, a mixture of your favourites
crumbled goat cheese
your favourite salad dressing- a balsamic vinaigrette is a great choice (I made it with a creamy avocado dressing)
Creamy Avocado Dressing
1 ripe avocado
3 garlic cloves
4 tbsp olive oil
1/4 c fresh cilantro
1/4 c fresh lime juice
1/2 water
salt and pepper
Directions
Combine the salad greens and red onion. Arrange on your plates and top with the peaches, corn and goat cheese. Drizzle with the dressing. Top with toasted pine nuts or almonds if you would like some crunch.
Creamy Avocado Dressing
Place the ingredients in a food processor. Blend until creamy. If it is too thick add small amounts of water until it is the consistency you want.
