½ c diced peaches

juice from 1 lime

1 tbsp (or more) basil simple syrup

1 c tonic water

4 oz gin (optional - if making an alcoholic drink)

6-8 basil leaves

½ c water

½ c sugar

Directions
Peach Basil Cocktail
Divide the peaches between 2 glasses. Add the basil simple syrup and muddle to break down the peaches. Add the lime juice, gin (if using) and ice.
Top with the tonic water.
Garnish with basil leaves or peach slices if desired.
Basil Simple Syrup
Combine water and sugar in a saucepan. Bring to a boil. Add basil leaves, steep for 15-20 minutes. Strain into a jar.
Refrigerate for up to 2 weeks.
Recipe Note
If you want to make this recipe into a non-alcoholic mocktail, leave out the tonic water and gin, and sub in non-alcoholic wine, or one of our non-alcoholic gin coolers.
