Peach Pudding Cake

Ingredients

½ c + 6 tbsp flour

1 tsp baking powder

1/3 tsp sea salt

¼ tsp baking soda

¾ tsp ground cardamom or nutmeg

½ c soft butter

½ c + 6 tbsp sugar

1 tsp almond extract

1 egg
-
½ c buttermilk
-
2 c diced peaches
Directions
Preheat the oven to 350°.
Combine the dry ingredients. Cream butter and sugar. Add almond extract and egg. Mix well. Add half of the dry ingredients, mix. Add the buttermilk and mix well. Add the remaining dry ingredients and mix. Transfer to a greased 9” dish. Top with the peaches.
Cover and bake for 35 minutes. Uncover and bake another 10-15 minutes until golden brown. Serve warm.
