Ontario peaches, sweet and juicy, can be enjoyed in so many different ways. I love them on a salad, in muffins or pies, or in a serving of warm peach cobbler.
Peach Cobbler

You can make 1/2 this recipe in a smaller pan if you like.

Ingredients

8-10 large peaches, diced

1/4 c brown sugar

1 tbsp cornstarch

1 tbsp fresh lemon juice

1 tsp almond extract

1/2 tsp ground nutmeg

1/2 tsp ground ginger

pinch of salt

2 c flour

1/2 c sugar

1 1/2 tsp baking powder

1/2 tsp salt

1/2 c cold butter, cubed

1/2 c sour cream

Filling
Combine the filling ingredients in a bowl. Spoon into a 9x13" pan. Bake at 350°F for 10 minutes.
Topping
Combine the dry ingredients, cut the butter in.
Add the sour cream, mix gently. It should be a little sticky. Add a little more sour cream if needed.
Place small bits of dough over the peach filling. Flatten to cover most of the peaches. Sprinkle with coarse sugar if desired.
In the preheated 350°F oven bake cobbler for 40-50 minutes until the topping is golden brown and the peach filling is bubbling.
Cool for 5 minutes before serving. Serve with a scoop of vanilla ice cream or whipped cream.
