Pineapple Fried Rice

We had this wonderfully fragrant and delicious rice with chicken breasts I had frozen in a marinade, plus simple roasted vegetables.
Ingredients

2 tbsp oil divided

2 eggs beaten

1 ½ c diced fresh pineapple (a small can, drained would also work)

1 red pepper diced

2 celery stalks, diced
-
¾ c green onion, sliced
-
2 garlic cloves, finely chopped

1 tbsp fresh ginger, minced

2 c cooked cold rice
-
1-2 tbsp tamari or soy sauce
-
1-2 tsp chili garlic sauce or sriracha

½ lime
-
1 tsp sesame oil
-
chopped cilantro
-
1 tbsp toasted sesame seeds
Directions
In a large frying pan or wok over medium high heat add 1 tsp oil. When hot, add eggs and cook for about 1 minute. Remove to a bowl.
Add 1 tbsp of oil, add pineapple, celery and red pepper and cook for 3-5 minutes. Add the green onions, garlic and ginger and cook for another minute. Add to the bowl with the eggs.
Reduce the heat to medium and add 2 tsp of oil and the rice. Cook for 3-5 minutes and add the ingredients in the bowl to the rice. Stir and cook until heated through.
Remove from the heat and add the tamari, chili garlic sauce and a squeeze or two of lime. Season with salt and pepper. Add 1 tsp of sesame oil.
Garnish with cilantro and sesame seeds. Add more tamari or chili sauce/sriracha as desired.
