This is a salad that is great for lunch, but also combined with a green salad and grilled protein (chicken, shrimp, tofu, beef) makes a great dinner for a warm evening.
If you have leftover rice from another meal this is a great way to use it up. I had some leftover pineapple from a cake recipe and knew it was a good night to have an asian inspired meal.
Paired with my version of Mexican Street Corn, these fresh green beans were delicious, but they would also make a fantastic side dish to go with anything you like to jazz up a meal.
