Plum and Almond Cake
Cooking is my passion, baking is my love. Stone fruit season is one of my favourite times of the year. This cake is moist and the plums bake down to a jammy consistency. Very good served with ice cream or whip cream, or a nice cup of espresso.
½ c. ground almonds (almond flour)
1 ½ tsp. baking powder
½ tsp. salt
½ c. butter
½ c. white sugar
½ c. brown sugar
1 tsp. grated orange zest
1 tsp. vanilla
14 prune (purple) plums halved and pitted
Grease a 10” springform / cake pan. Mix flour, ground almonds, baking powder and salt together. Cream butter and sugars 4 min. Add eggs one at a time, then add zest and vanilla. Mix 4 minutes. Mix in dry ingredients until smooth. Scrape batter into your cake pan , arrange plums cut side down on top of the batter. Bake at 350 for 50 - 60 minutes. Let cool in pan about 30 minutes. Run a knife around sides of the pan to loosen the cake, remove from the pan and dust with icing sugar if desired. Enjoy!
