Portuguese Milk Tarts (Queijadas de Leite)

Finding myself with some extra milk left after my Grandson's visit I found a recipe for traditional Portuguese Tarts made with just a few ingredients. The result is a sweet, custardy, creamy tart that is melt in your mouth delicious!
Ingredients

3/4 c. sugar

1/2 c. all purpose flour

2 eggs, room temperature, slightly beaten

1/4 c. melted butter, slightly cooled

1 3/4 c. milk, room temperature

1/2 tsp vanilla

1 1/2 tsp sugar

3/4 tsp cinnamon
Directions
Grease a muffin tin with oil (I used canola oil). Preheat your oven to 375°.
Mix sugar and flour in a bowl. Whisk in eggs until blended. Whisk in melted butter, then milk and vanilla. The batter will be very liquid. Pour into the muffin pan, filling about 3/4 full.
Bake for about 30-35 minutes. They will be golden on top. The tarts puff up while baking but fall in after they are done. Let them cool in the pan for 10 minutes, then carefully run a knife around the edge to loosen the sides and lift out. Sprinkle with the icing sugar.
These are best served the same day. Nice with a few fresh sliced strawberries on the side and a cup of espresso. Enjoy!
