Puff Pastry Pesto Chicken with Garlic & Pesto Beans and Tomatoes

This is a beautiful presentation thanks to ready made puff pastry.

Ingredients

2 chicken breasts, pounded to even thickness
-
salt and pepper
-
2 tsp basil pesto
-
1/2 sheet puff pastry, thawed and cut into strips

olive oil
-
Green or Yellow Beans, or a combination
-
1 pkg Apero Tomatoes, quartered
-
2 garlic cloves
-
salt and pepper
-
fresh basil, if desired

Directions
Puff Pastry Pesto Chicken
Preheat the oven to 425°F. Place the chicken on a parchment lined pan. Season with salt and pepper, then spread 1 tsp of pesto on each chicken breast. Lay 4 strips of puff pastry, slightly overlapped, onto the chicken. Tuck the edges under slightly. Brush with a little oil.
Bake for approximately 20 minutes or until the chicken registers 165° and the pastry is golden brown. Cut the chicken into slices.
Beans and Tomatoes with Garlic and Basil
Trim the beans, steam and set aside.
Heat a little oil in a skillet. Add the garlic and tomatoes and sauté until the tomatoes are soft and cooked down. Add the beans and toss until they are coated and heated through. Season and add the fresh basil if you are using it.
Place some beans and tomatoes onto a plate. Top with the chicken slices. Spoon a little of the tomatoes on top of the chicken.
