Rainbow Salad with Turmeric Ginger Dressing

This recipe was adapted from madeleineshaw.com. We turned her Rainbow Vegetable Rice Paper Rolls into a huge, delicious Rainbow Salad, served family-style (serves 6, with some leftovers for the next day!)

You will need:

  • 1 package of rice noodles
  • 1 head of green leaf lettuce
  • 2 avocados, diced
  • 2-3 carrots, grated
  • 2-3 raw beets, grated
  • 1 mango, diced
  • 1/2 cucumber, julienned

Optional toppings:

  • 8-10 mint leaves
  • Toasted cashews

Turmeric Ginger Dressing:

  • 1 tsp turmeric
  • 2 tsp fresh ginger, grated
  • 1 large clove of garlic
  • 8 tbsp of tahini 
  • 2 limes, juiced
  • 4 tbsp water
  • 2 tsp tamari
  • 2 tsp maple syrup

Cook rice noodles according to package directions, and set aside to cool. Combine all of the ingredients for the dressing in a medium sized bowl, and whisk well. Layer a bed of lettuce on a large platter, and pile cooled noodles on top. Top with all of your beautiful rainbow-coloured vegetables, and optional toppings, if desired. Drizzle with Turmeric Ginger dressing, and enjoy!
