Rich Caramel Sauce

This recipe makes 1¼ c of sauce.
Ingredients

1 c granulated sugar

¼ tsp lemon juice

¼ c cold water

¾ c heavy cream

2 tbsp butter

1 tsp vanilla
Directions
Combine sugar, lemon juice and water in a heavy saucepan. Brush down sides with water.
Bring to a boil over medium high heat. Cook 5-8 minutes, do not stir, but stay close to keep watch. Sauce will bubble up. The heat is caramelizing the granulated sugar which will turn an amber colour.
Swirl once colour starts to appear. Continue until sauce is medium amber.
Remove saucepan from heat. Slowly add cream. If any hardened bits remain, place pan over heat again and stir until dissolved.
Add butter, stir in vanilla. Sauce will keep for up to 5 days in the refrigerator. Just re-heat to use.
