Roasted Ratatouille

Ratatouille is basically stewed vegetables and makes a very comforting dish using vegetables like eggplant and zucchini. Roasting it in the oven adds a depth of flavour.
It’s nice served over rice or spaghetti squash.
Ingredients

2 small onions, 1/4” thick slices

2 red peppers, cut into chunks

1 medium eggplant, large chunks

2 zucchini, 1/4” thick rounds

8-10 garlic cloves, peeled

1/2 c olive oil

1 tsp fresh rosemary, chopped

salt

4 medium size tomatoes, large chunks

1/4 c fresh basil, thinly sliced
Directions
Preheat the oven to 400°, line 2 baking sheets with parchment paper.
Combine all the ingredients except the tomato. Roast for 40 minutes, stir occasionally and change the position of the pans in the oven once.
Divide the tomatoes between the pans, stir and roast another 35 minutes. If it seems too dry add a another tablespoon of oil to each pan.
Transfer to a serving bowl and top with the chopped basil.
Top with crumbled feta if you like.
