Samosa Galette

A galette is basically a rustic pie made with a biscuit type dough. It can be used with savoury or sweet fillings.
Depending on the filling you can add spices to the dough to complement the flavours.
This was a tasty Indian inspired meal.
Ingredients

1 3/4 cup flour

2 tsp baking powder

1 tsp sugar

1/2 tsp baking soda

1/2 tsp salt

6 tbsp cold butter, cubed

3/4 cup buttermilk

2 tbsp oil
-
1 tsp cumin seeds
-
1/2 tsp fennel seeds

1 medium onion, finely chopped

1" piece ginger, minced

2 garlic cloves, minced
-
1 tsp each of turmeric, ground cumin and salt

1/2 tsp each of garam masala and pepper

1/8 tsp cayenne pepper

2 cups diced potatoes

1 1/2 c vegetable broth

1 cup frozen peas
-
2 tbsp cilantro

Galette Dough
Combine all dry ingredients. Cut in butter until the size of peas. Add buttermilk and mix until combined.
Press into an 8" circle, wrap in plastic and refrigerate for 1 hour.
Samosa Filling
Sauté the cumin and fennel seeds in oil for 1 minute, add the onion and cook for 5 minutes. Add the ginger, garlic and spices, cook for 1 minute. Add the potatoes and cook for 5 minutes. Add the broth and simmer for 20-25 minutes. Add the peas and cilantro and cook for 1 minute. Remove and let cool completely.
Preheat the oven to 425°. Remove the dough, place on a sheet of parchment paper and roll out to a 14" circle. Place the filling on the dough leaving a 2" border. Fold the edges of the pastry over the filling, pleating as necessary. Bake for 20- 30 minutes until golden brown. Cut into wedges and serve.
