Sausage Sheet Pan Dinner

One pan wonder!
Ingredients

6 cups of chopped vegetables, onion, carrots, broccoli, fennel or whatever you have on hand

3 c baby potatoes or sweet potatoes cut into chunks

1- 1 1/2 tbsp olive oil

1- 1 1/2 tbsp fresh herbs chopped, or dried Italian seasoning

1 tsp smoked paprika

2-3 garlic cloves, cut into quarters

salt and pepper

1 pkg. sausages, pork, turkey or vegetarian cut into 1" chunks
Directions
Heat the oven to 400°. Line a large baking sheet with parchment paper or foil.
Place the vegetables and potatoes on the sheet. Drizzle with the oil and add the herbs, paprika, salt and pepper. Mix together. Scatter the chopped sausage on top.
Bake for 20-30 minutes until the vegetables are tender and the sausages are browned.
Top with a bit of grated parmesan cheese if desired.
