Savoury Apple Tart

A great appetizer or first course.
Ingredients

2 Lucy Rose Apples, peeled, sliced 1/4 inch thick

1 cup Apple Cider

2 tsp Fresh Thyme

1 sheet Frozen Puff Pastry, cut into 10" squares

2 tbsp Dijon or Grainy Mustard

1 peice Grand Aged Cheddar Cheese

3 cups Arugula
-
1 tbsp Olive Oil
-
2 tsp Lemon Juice

Salt/Pepper
Directions
Apples
Simmer together 10 min, apples and apple cider
Remove apples, set aside. Reduce apple cider to 2 tablespoons
Pour reduced apple cider over apples and add thyme. Toss together
Pastry
Place puff pastry on parchment lined sheet
Score a 1/2" border using a butter knife
Spread mustard over pastry
Top with 2/3 of cheese
Top with apples leaving a 1" border
Top with remaining cheese
Bake 375 degrees for 15-20 min
Arugula
Toss arugula with olive oil and lemon juice, season with salt and pepper
Pile on top of tart just before serving
