As the temperature is rising I start thinking about salads and barbecued food. This is a great side dish with grilled shrimp or chicken. I added a spicy rub mix to the shrimp since the salad has some sweeter notes.
Shaved Brussel Sprout Salad

You can add some grated carrots if you want a little extra colour in this salad.

Ingredients

4 c shaved or thinly sliced brussel sprouts

1/2 c red onion thinly sliced (soak in cold water for 20 min then drain)

1/4 c pine nuts, toasted

1/3 c dried cranberries

1/3 c grated parmesan or crumbled feta

2 1/2 tbsp maple syrup

2 tbsp olive oil

2 tbsp balsamic vinegar

1 large garlic clove, minced

1 tsp salt

1/2 tsp pepper
Dressing
Directions
Combine the dressing ingredients in a jar. Shake to combine.
Place all of the salad ingredients in a large bowl. Pour the dressing over top, stir to combine.
Let it sit for 15 minutes, taste and season with more salt and pepper if needed.
