Smoked Tofu Burrito Bowl with Cilantro Lime Rice

A restaurant-worthy meal that comes together in your own kitchen!
Other additions or substitutions can be spinach, black beans, chick peas, or whatever your favourite bowl filler is.

Ingredients

2 c cooked rice

zest from lime
-
1/4 c lime juice

1 c cilantro, finely chopped

1 tbsp olive oil

2 garlic cloves, minced

salt

1 pkg smoked tofu, cut into cubes

fajita seasoning (approximately 1 tsp)

1 tbsp oil
-
1/2 Red onion, thinly sliced

1/4 c water
-
2 tbsp white vinegar
-
2 tbsp apple cider vinegar
-
1 tsp maple syrup
-
3/4 tsp sea salt
-
Diced tomatoes
-
Red pepper slices, raw or cooked

Pickled red onion (see recipe)

Black beans (optional)

Directions
Cilantro Lime Rice
Heat the oil, cook the garlic for 1 minute. Add the cooked rice, stir to heat through. Remove from the heat and add the cilantro, lime zest and juice. Season with the salt.
Smoked Tofu
Heat the oil, toss the tofu cubes with the fajita seasoning and add to the pan. Stir and cook until heated through and a little crispy.
Pickled Red Onion
Place the red onion in a jar. Heat the remaining ingredients together and heat to a gentle simmer. Pour over the onions, let cool for 30 minutes.
Put it together
Spoon some rice into bowls, add the toppings, drizzle with sauce and garnish with cilantro. Enjoy.
