This is an easy to make salad, perfect to take to a potluck. It's filling enough for dinner, hopefully some leftovers for lunch the next day. If you like it spicier a little hot sauce can be added.

This is an easy to make salad, perfect to take to a potluck. It's filling enough for dinner, hopefully some leftovers for lunch the next day. If you like it spicier a little hot sauce can be added.

Ingredients

2 c pasta, cooked and drained

1 lb chicken, cubed or in strips

1 pkg. taco seasoning

1 can black beans, drained and rinsed

3-4 green onions, chopped

1 pint cherry tomatoes, chopped

1-2 cobs of corn, cooked and sliced off the cob

1 avocado, diced
-
1/4c fresh cilantro, chopped

feta or cotija cheese, crumbled

6 tbsp olive oil

2 tbsp lime juice
-
2 tsp honey
-
1/2 tsp dried cumin
-
1/2 tsp dried coriander
-
1/2 tsp salt and pepper

Directions
Cook the chicken in the taco seasoning according to the package directions.
Combine the cooked pasta, beans, onions, corn and tomatoes in a large bowl.
Add the chicken and toss.
Add the dressing, mix well.
Gently stir in the avocado, cheese and cilantro.
Season with salt and pepper if needed.
