Spanish Meal: Garlic Mushrooms (Champinones al ajillo)

Ingredients

1/4 cup olive oil flavourful juices

2 chopped garlic cloves

8 oz. (250g) mushrooms, halved or quartered

2 choped garlic cloves

2 tbsp dry sherry or white wine

1 tbsp lemon juice

1/4 tsp smoked paprika

Small pinch cayenne pepper(optional)

Salt and pepper to taste
Directions
Saute olive oil and 2 cloves garlic for 3-4 min. Add mushrooms and cook for 3 min. Reduce heat and add remaining garlic, sherry, lemon juice, paprika, salt and pepper. Cook 3-4 min. More. Season to taste, sprinkle with chopped parsley.
Recipe Note
Can be served with crusty bread to soak up the flavourful juices.
