Spanish Meal: Tomato Bread (Pan con Tomate)
3-4 slices of crusty bread sliced thickly
1 clove garlic, halved lengthwise
Salt to taste
2 small or 1 medium tomato, halved
Grate tomato into a bowl, using a box grater, discard the skin. Add 1- 1 1/2 tsp olive oil and a pinch of salt.
Instead of grating the tomato you can rub the tomato directly on the bread, after the garlic. It melts right into the bread.
Toast or grill the bread. Rub the toasted bread with the halved garlic. Carefully spoon the tomato mixture on the garlic toast, top with a drizzle of olive oil and a spinkle of salt.
