Summertime Refreshers

Simple, blender-blitzed slushies, sodas, and smoothies to cool and refresh all summer long!

WATERMELON SLUSHIES

  • 3 cups cubed seedless or seeded watermelon
  • 4 ice cubes
  • 1/3 cup coconut water
  • 4 mint leaves

Put everything in blender, blitz until the watermelon is the consistency you like adding more water if needed. To make it a bit of a creamy watermelon slushie sub in 1/3 cup low fat coconut milk in place of the coconut water.

HOME MADE SODA
Puree two cups of any fruit you have (strawberries, blue berries, kiwi, pineapple or peaches)
Pour the pureed fruit through a fine sieve to remove any seeds
In the bottom of a chilled glass put 3 tablespoons of the fruit puree, pour 8 ounces of sparkling water over the puree. Give a little stir and viola. You have a refreshing soda. Let the kids decide what flavours they like and they can help make them.

MANGO CREAM

  • 1 cup frozen mango pieces
  • 1 cup milk (almond milk or milk of your choice)
  • 1/3 cup plain Skyr style yogurt (higher in protein and lower in carbs than Greek yogurt)

Blitz everything together in the blender adding more milk if smoothie is too thick. The frozen mango offers a silky texture to the drink.
