This is a light, crisp salad that is a great side with grilled shrimp or chicken. I am serving it tonight with Chili Crisp Chicken Skewers. The Chili Crisp recipe is on our website that I made previously with shrimp.
I feel like fennel is something people are sometimes hesitant to try. It is equally good raw (thinly sliced in a salad with red onion and orange segments) and cooked (roasted or sautéed, great with chicken or fish.)
Fennel is beneficial for heart health, inflammation, a good source of vitamin C and is low in calories. It has a slight licorice flavour which is more noticeable when eaten raw.
