Tarragon Bean Salad
- 1/2 lb yellow and green beans
- 1 tbsp olive oil
1 tbsp white or red wine vinegar
1 tsp Dijon mustard
1 garlic clove minced
1 tbsp fresh tarragon, or 1/2 tsp dried
1/8 tsp salt
Combine dressing ingredients in large bowl.
Cook beans 3-5 minutes, drain and add to bowl. Toss with dressing. Season with salt and pepper if needed.
