Turkey Meatloaf

This is a different approach to meatloaf, made with ground turkey, (or chicken) and bursting with vegetables!

Ingredients

2 tbsp olive oil

1 cup finely chopped onion

2 minced garlic cloves

1 cup dried butternut squash
-
1 1/2 cup finely chopped kale
-
1 tbsp fresh thyme (1 tsp dried)

1 tsp smoked paprika
-
1/2 tsp dried chili flakes

1 tsp salt
-
1/2 tsp pepper
-
1 pkg ground turkey (Hayter's)

3/4 cup panko crumbs (reg. or gluten free)

1/2 cup grated parmesan cheese
-
1/4 cup chopped parsley
-
1 egg
-
1 tsp salt
-
1/2 tsp pepper
-
2 tbsp tomato paste
-
3 tbsp maple syrup
-
3 tbsp dijon mustard
-
3 tbsp apple cider vinegar
MEATLOAF
GLAZE
Directions
Heat 1 tbsp olive oil in skillet. Then add onion, garlic, squash, kale and seasonings. Cook for 10 mins, let cool.
Combine turkey, panko crumbs, parmesan and parsley. Place on parchment lined pan, press into an oval shape (football).
In a small bowl, mix together the tomato paste, maple syrup, Dijon mustard and apple cider vinegar and divide. Brush 1/2 of the glaze onto the meatloaf. Bake at 375 F for 30-35 mins or until the center is at 165 F.
Let rest 10 mins, spoon the remaining sauce over top of the meatloaf, slice and serve with salad.
