In my family Father's Day means burgers on the barbecue and lemon dessert of some kind.

Vegetable skewers are a nice addition with the burgers (or steak or chicken or sausages or tofu). I think the most important part is the barbecue.

Ingredients

2 tbsp olive oil

2 tsp balsamic vinegar

1 garlic clove minced

2 tsp fresh rosemary or whatever herb you prefer

Thread whatever combination of vegetables you like onto skewers.
If you are using bamboo skewers make sure to soak them first so they don't burn.
I did a very large portobello mushroom separately and then sliced it to combine with the other veggies once they were done.
Marinade
Combine the ingredients. Brush the portobello mushroom with some of the marinade.
Continue to brush the vegetables and mushroom as they are cooking.
It will take 8-12 minutes for the vegetables to cook, and about 3-4 minutes per side for the mushroom.
Remove from the skewers and place on a serving platter.
