Recipe: Fish Tacos with Mango Slaw

Fish Tacos are all the rage right now, and why not? They're a healthy, low calorie alternative to chicken or beef.

You will need...

Ontario Natural Manitoulin Island Whitefish cooked and shredded
1 cup bean sprouts
1 cup red cabbage, chopped
1/4 cup radish, shredded
1 thumb sized piece of ginger, shredded
Zest and juice of one lime
1 mango, diced
A splash of apple cider vinegar
A small pinch of sugar (brings out the colours)
La Tortilla Factory White Corn Tortillas or Lita's Tortillas, or tortillas of your choice

Put it together...

Mix thoroughly slaw ingredients and let sit for 1/2 hour or more for flavours to meld together. Place cooked whitefish shreds on grilled tortilla and top with fresh slaw.  Try with a dollop of mayo sprinkled with smoked paprika. Garnish with chopped cilantro.
