Recipe: Middle Eastern Chicken Thighs

Bone in thighs deliver more flavour and moisture on the BBQ, and BONUS, they're very affordable. Take the skin off of the thighs before applying the paste. You can use this recipe for all chicken parts, or whole chickens, too.

You will need...

3 tbsp olive oil
2 tbsp ground cumin
2 tbsp smoky paprika
½ tsp cinnamon
2 tbsp brown sugar
2 tbsp lemon juice
2 gloves garlic finely minced (I like to use my kitchen rasp for this step)
½ tsp black pepper
½ tsp salt
6 bone in skin removed chicken thighs patted dry

Put it together...

Mix everything in a little bowl. Spread the paste over the skinless chicken thighs. Cover with wrap, leave in the fridge so the flavours all get acquainted with each other. When you are ready to BBQ take the chicken thighs out of the fridge so they can come to room temp. Pre-heat your BBQ to 350 degrees. Place your chicken on the BBQ. Cook on one side for apprx. 15 minutes then flip over and continue to cook until internal temp is 180 degrees.
