Recipe: Vanilla Honey Toasty Trail Mix

This is a fun recipe to make with kids! Quick to put together, and wholesome to eat, almost all of the ingredients come from our bulk bins. Easy, delicious, and affordable! Makes 8 cups.

You will need...

  • 1-1/2 cups organic large flake rolled oats
  • 2 generous tbsp coconut oil, warmed to melting
  • 1/4 cup wheat germ
  • 1/2 cup shredded, unsweetened coconut
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 2 generous tbsp honey
  • 1-1/2 tsp vanilla paste
  • 1 cup dried papaya
  • 1 cup Thompson raisins
  • 1 cup Virginia peanuts
  • 1 cup raw sunflower seeds
  • 1 cup raw cashews
  • 1 cup Reese's Pieces

    Put it together...

    Preheat oven to 300 degrees. Place oats and coconut in bowl. Add honey, vanilla, and melted coconut oil, stir well to mix. Spread out on large, greased baking sheet (you can use a little of the melted coconut oil to lightly grease the sheet).
    This part is great for kids! Use your fingers to pinch oat mixture together so clumps are formed throughout the mix. Bake for about 15 minutes, turning mixture over once, and checking often until mixture is beginning to brown around the edges of the pan. Remove from oven and add raw cashews and raw sunflower seeds, mix in and spread out mixture again. Continue baking until oat mixture is lightly brown and crispy, and cashews/sunflower seeds are lightly toasted. Allow to cool.
    In large bowl place raisins, papaya, and Reese's Pieces, add cooled oat mixture and toss until well mixed. Store tightly covered.
