Pasta with Cherry Tomatoes & Apple Crisp

One of the most comforting desserts for me is Apple Crisp. It always brings back childhood memories of the most awesome smells coming from the kitchen. The recipe I use is a family recipe that I have slightly adjusted over the years. On the back of my recipe card is written, from Mom "the best".
Ingredients

3 cups cherry tomatoes, halved

1/2 cup thinly sliced red onion

4 cloves chopped garlic

1/4- 1/2 tsp red chili flakes if desired

2 tbsp olive oil

1/3 cup fresh basil, chopped

1/2 cup grated parmesan cheese

1/2 package of Garofalo pasta, cooked and drained
(save 3/4 cup of pasta water)

salt and pepper

Grated parmesan and chopped basil for garnish

6 apples, peeled, cored and then sliced or diced (depending on the size of pan)

1/2 cup brown sugar

3/4 cup whole wheat flour
-
3/4 cup large flake rolled oats
-
1 tsp cinnamon
-
1/2 tsp nutmeg
-
1/2 cup butter, cold and cut into small pieces

Directions
Pasta with Cherry Tomatoes
Heat olive oil in a large skillet, add onion and cook for 4-5 minutes. Add the garlic and chili flakes, if using and stir for 1-2 minutes. Add the tomatoes, and basil and cook for about 15 minutes, until soft and broken down.
Add the cooked pasta and 1/4 -1/2 cup of the pasta water. Stir until the pasta is coated with the sauce, about 5 minutes. Add 1/4 cup of parmesan cheese, season with salt and pepper. Add more pasta water to loosen the sauce if necessary.
Garnish with additional parmesan and basil. Serve with grilled baguette and a salad for a satisfying meal.
This pasta could be topped with sliced grilled chicken or shrimp for added protein.
Apple Crisp
Combine the topping ingredients until crumbly. Place apples into a 9 or 9" baking pan or divide into individual ramekins. Press the crumble on top .
Bake at 350° until brown and the apples are soft, about 20 minutes for small ramekins, about 10 minutes longer if in a larger pan.
I sometimes combine different types of apples, some tart, some sweeter. A Macintosh or Paula Red will bake down more, a Granny Smith, Honeycrisp or Northern Spy will hold their shape. They will all taste amazing!
You could add chopped pecans to the topping or add cranberries in with the apples. If you have leftover topping it is good sprinkled on top of muffins before placing in the oven. Top with vanilla ice cream or whipped cream, drizzled with caramel sauce is my favourite.
