Asparagus Tart

Ingredients

1/2 sheet Puff Pastry, thawed

1 tbsp Dijon mustard

1 c grated Havarti with herbs

12 stalks asparagus, lightly sautéed or blanched

1 large shallot sliced

3 large mushrooms, chopped

1 tsp fresh thyme

grated lemon zest

balsamic glaze
Directions
Preheat oven to 400, place puff pastry on parchment lined tray. Lightly score a 1" border around edges. Using a fork score the pastry inside the border. Bake 12-15 min. Remove, spread with Dijon mustard, sprinkle with cheese. Top with shallots and mushrooms. Arrange asparagus over top, alternate end to end. Bake 15-20 min. Remove and top with lemon zest, drizzle with balsamic glaze.
Recipe Note
I served this with grilled chicken and a tomato salad. It would make a great appetizer, or lunch served with a salad.
